Food of Oaxaca Books
- The Food of Oaxaca (Alejandro Ruiz, Carla Altesor).epub
The Food of Oaxaca A groundbreaking cookbook celebrating the distinctive cuisine and culture of Oaxaca, from "one of Mexico's best chefs" (Anthony Bourdain). With a foreword by Enrique Olvera.
In The Food of Oaxaca, chef Alejandro Ruiz introduces home cooks to the vibrant foods of his home state—"the culinary capital of Mexico" (CNN)—with more than 50 recipes both ancestral and original. Divided into three parts, the book covers the traditional dishes of the region; the cuisine of the Oaxacan coast; and the food he serves today at his acclaimed restaurant, Casa Oaxaca. Here are rustic recipes for making your own tortillas, and preparing memelas, tamales, and moles, as well as Ruiz's own creations, like Duck Tacos with Coloradito; Jicama Tacos; Shrimp, Nopal, Fava Bean, and Pea Soup; Catch of the Day with Tomato Marmalade; and Oaxacan Chocolate Mousse. Interspersed are thoughtful essays on dishes, ingredients, kitchen tools, and local traditions that transport the reader...

- Recommnedation from JessicaSome of the more famous high-class restaurants in the city are:
Casa Oaxaca
Pitiona
Los Danzantes ( Great) - Criollo (Run ( by the chef of the Puzol rstaurnat We were not impressed)
- All require reservations.
Next level choices would be:
Las Quince Letras
Los Pacos (mole tasting)
La Olla - Eatiing at theThe Mercado 20 de Noviembre in smaller restaurants around 2pm when they have a comida corrida (daily menu that includes a soup, main dish, flavored water, and dessert.) That will give you an idea of how most locals eat.
Good mezcal is made in a town 1 hr outside the city called Santiago Matatlan. You would need to hire a guide/transport for this. It would be the real deal mezcal where they show you how it’s made and bottle it in old Coca Cola bottles. ❤️
Sometimes in a tour to Mitla, an archaeological site, a mezcal stop is included so it’s something you can discuss with a hired guide.
You can also find mezcal all over the city in every restaurant and in mezcalerías (espadín and tobalá are the most popular to order.)
